This honey has been harvested from Tasmania's pristine and threatened SW wilderness.  Leatherwood flowers from January-February and its nectar rich flowers are a magnet for pollinators. 
 
The honey has a strong flavour profile with magnolia and jasmine at the front end, and a a green herbaceous finish. It has been described as tasting what it is like to walk in the mossy shadows of a dimly lit forest - a secretive, complex and rare honey.
 
The ancient forests where leatherwood trees grow continue to be logged, threatening the existence of this precious resource. This year, the trees flowered so late that many of the beekeepers in Southern Tasmania produced none of this honey on our sites.
