This honey originates from Sandford in Tasmania's SE. In early Summer, the Leptospermum lanigerum produces flowers that are part of the manuka family, but this honey is not tested for MGO, so I call it Tea tree honey instead.
This is a dark honey that becomes lighter in colour and smooth and spreadable as it crystallises. It is bold and strong, tasting like burnt apricot jam, lingering with a rosewater finish. Sound weird? Maybe, but if you like a full bodied flavour that will smack you in the mouth, this one is for you.
